Now, we first had protein pancakes at a local breakfast joint and loved them but could never quite figure out how they made them. This was great for their business, not so much on our wallets. About a year ago, I discovered Tone It Up. If you don't know what Tone It Up is check out their website (Tone It Up). These girls, Karena and Katrina, will change your life! :)
Anyways, they have a protein pancake recipe that is soooo yummy, yummy, yummy. This recipe became our go to breakfast that was conveniently available at home and super healthy. Lets get started...
"Her" Protein Pancake
Ingredients:
1/2 banana
1/4 cup. egg whites
1 scoop/packet protein protein powder
1 tablespoon ground flaxseed
serving size: 1 pancake (I can't eat more than one!)
1. Mash half of a banana in small bowl.
2. Pour in egg whites, flaxseed, and protein powder. Mix well. May add more egg whites or protein powder until consistency is that of pancakes.
3. Spray your skillet with cooking spray. Cook each side on medium heat until done.
Tip: When bubbles form in batter....time to flip!
4. Top with your favorite pancake goodies. I love to add almond butter and the other half of the banana to mine!
NOW...the man of the house keeps to a pretty low carb and no sugar diet (this includes most fruits). And since bananas have a high sugar content he didn't want to "indulge" (seriously they are that good) in these pancakes too often and had to miss out! :( Well, one day were shopping at Trader Joe's and saw this amazing creation...Almond Meal/Flour!! Why hadn't we noticed this before? We decided to get it and try a little experimenting at home to create his version of a protein pancake! It didn't take many tries or substitutions to get it PERFECT!
"His" Protein Pancake
Ingredients:
1/4 cup egg whites
2 tablespoons almond flour
1 tablespoon ground flaxseed
1 scoop/packet your favorite protein powder
serving size: 1 pancake
Directions:
1. Mix all ingredients together in a small bowl. Add more almond flour or egg whites to achieve the consistency of pancakes.
2. Spray your skillet with cooking spray. Cook each side on medium heat until done.
3. Top with yummy goodies :)

I HIGHLY recommend purchasing this brand (side note: not getting paid to say that) because it gives the pancakes the most amazing texture, but we have tried other protein powders that work just fine too.
